Flawless Victory!
Through a series of button inputs, a player found an unexplored menu that remained dormant in the arcade versions of Mortal Kombat 1, 2, and 3. How did they manage to remain hidden for so long? We're talking almost 20 years...
The newly discovered menu is personally programmed by MK creator Ed J Boon, and appears as “EJB Menu” from his initials.

The MK1 and MK2 menus allow you to track various character endings, input initials directly into the leaderboard, run debugging and diagnostic tests on the game cabinet, and do something called “coin bookkeeping.” There’s also a “Hello” option, which YourMKArcadeSource speculates is simply a list of people Ed Boon wanted to give a shoutout to. It’s fitting, since the first name on the MK2 list is “mom.”

The MK3 Ed Boon menu is significantly more robust, and includes an option to instantly unlock hidden characters. It also lets you track every death, a “demo” that’s typically only offered to players who’ve beaten the game on Master difficulty. There’s also something called the “Penacho/Miller Game,” which fires up an incredibly difficult Galaga clone.

It's not yet clear if these hidden menus exist in other types of franchises, or in any home console versions.
