Oleocanthal and oleagin are two special phenols that are natural pharmaceutical substances. They are valuable, as they have significant biological activity and are found in olive oil.
According to scientific research, oil thistle has anti-inflammatory action comparable to ibuprofen (Ibuprofen), a non-steroidal anti-inflammatory drug that has analgesic and antipyretic effects. It has also been used for the treatment of rheumatoid arthritis and osteoarthritis, and in studies conducted on laboratory animals inhibition of the progression of Alzheimer's disease was observed. Oil thistle is responsible for the burning sensation in the throat that is characteristic of agourelio.
Oleacein, on the other hand, is the most powerful antioxidant compound of olive oil and, like oleocanthal, helps inhibit the progression of Alzheimer's disease.
But why did we discuss the two phenols in such detail?
Because the olive oil's content in’ these two protective substances for the body is determined through a simple test. The test result can differentiate olive oils based on a color scale. Thus, depending on their content of certain special phenols, the color varies.
The test is carried out using a “test tube” called ARISTOLEOTM©, which consists of a sealed 12 mm vial containing a reagent. The olive oil to be tested is added with a syringe. The vial is shaken and after about an hour, a layer appears at the bottomwith a color that varies from light yellow to dark green. Without being an expert, using only the knowledge offered by the color scale, one can choose the best olive oil.

This is the "Melliou – Magiatis", which comes from the names of chemist Dr. Eleni Melliou and Professor of Pharmacy Dr. Prokopis Magiatis, who work at the Pharmacognosy Laboratory of the Department of Pharmacy of the National and Kapodistrian University of Athens.
Their research into detecting the health-protective properties of olive oil led them to ARISTOLEOTM©, the test we described above and which can be performed by anyone. Consumer or producer.
What is missing, however, and what the two scientists who took part in the 3rd “Greece Innovates!” Competitionare seeking, is publicity. As Eleni Melliou and Prokopis Magiatis, their expectation is “as much publicity as possible through the planned promotional activities.”
They also explain that they want to meet the people who support innovation in Greece and be given the opportunity to convey their concerns and ideas.
In any case, a patent of this kind, if released for mass production, can help interested parties make the best choice of olive oil, with the ideal combination: low price with the bottle not exceeding €15 and in less than an hour.
