Of course Pokémon Go isn't the most visually complex game, but there's a lot of scrolling and camera movement, and the smoother touch response is much better when you're performing a Pokéball throw with your finger.
Pokémon Go was previously locked to 30fps on iOS devices. Many Android phones are already capable of running the game at a higher frame rate, although on those devices, support may not be as successful. However, Pokémon Go has generally run better on Android devices until now.

The new iOS feature isn't limited to the iPhone 13 Pro and Pro Max models, which are the only iPhones with 120Hz "ProMotion" displays. It also works on older 8 Plus models, where it's possible to unlock the frame rate, although the older A11 processor doesn't always maintain a consistent 60fps.
Niantic is n't doing much to promote this feature, which is disabled by default and isn't mentioned in the 1.191.0 release notes, beyond a vague reference to "various quality of life improvements."
