The far left icon, (the square box), is the default skin color selector for all categories. Next to it is a smiley face, which when tapped will take you back to the regular keyboard. After that, starting with the clock icon, are all the different emoji categories. From left to right you'll find emotions, people, events, food, metaphors, symbols, and the "classic emojis" represented as ASCII (:-D, for example).

This will cause you to lose the point where the selected emoji.

You can find and use the emoji you want via the Internet. Emojipedia is a useful website where you can enter a search term and get matching results. For example, if you want to find an emoji that includes a cat, type in the search term “cat” and emojipedia will find you all the emojis that are related to cats.
Then you can simply copy the emoji directly from the top of the page and paste it wherever you want. Alternatively, you can click the “Copy” button right below the emoji description to automatically put it on your clipboard.
