In February, Samsung announced that its new Sleep Apnea detection feature had been approved by the FDA in the US. Now, it looks like the Galaxy Watch series is starting to support this feature. A Reddit user posted some screenshots that show that the “Sleep Apnea Detection” feature will be available after an update to the Samsung Health Monitor app. He mentioned that he is participating in the beta , which is available for the Galaxy Watch 4, 5, and 6.
According to the Samsung Health Monitor app, the Watch 4 is the oldest model that supports the new feature. Additionally, it requires at least Wear OS 5 and One UI Watch 6 for the feature to work.
The app requires at least two nights to detect signs of sleep apnea on the Galaxy Watch. The watch then tracks the user's number of "relative blood oxygen decreases" each night. This measurement can determine whether the user has moderate to severe sleep apnea. The feature turns off after two nights.

At the moment, Samsung hasn't provided much information about the feature beyond the FDA. If it does roll out to users via One UI Watch 6, it would be reasonable to assume that it will be released alongside the Galaxy Watch 7. After some time, the full release of One UI Watch 6 will expand to older smartwatches beyond the new Watch 7, although that may take a few months.
